Goal:

To outline the history and trends of the food service industry.

 

Description:

This lesson presents events, influences and trends surrounding the history of the food service industry. Students will have the opportunity to investigate individual contributions and events instrumental in shaping the food service industry from its beginnings to the present day.

 

Objectives:

1.    To outline the history and growth of the food service industry.

2.    To discuss the history and trends of the food service industry.

3.    To identify an entrepreneur who has made significant contributions to the food service industry.

4.    To recognize entrepreneurship opportunities.

Essential Questions:

1.    What are the origins of the restaurant?

2.    What significant individuals and events have influenced the food service industry throughout history?

 

Step 1: Bell Ringer:

·         Have students complete the first and second columns of the KWL Chart Bell Ringer Activity.

Step 2: Distribute the Action Plan, Vocabulary Handout and Key Concepts.

·         The Action Plan lays out a list of tasks for students to complete during the lesson.

·         The Vocabulary Handout is a list of terms used throughout the lesson.

·         The Key Concepts is an outline which identifies the main ideas presented in the lesson which students can fill in to aid in note taking during the lesson.

Step 3: Show slides one to 21 of the History PowerPoint® segment.

·         This portion of the segment is 21 slides long.

·         Be sure to utilize the Key Concepts for this segment of the lesson.

Step 4: Students should begin the Food Service Industry in History Activity.

·         Students will investigate a historical event, invention, influence or fact and share their findings with the class.

·         Instruct students to conduct a quick search on how the automobile influenced fast-food restaurants in the 1950s. Lead students to share their findings.

Step 2: Show slides 42 to 55 of the History PowerPoint® segment.

·         This portion of the segment is 14 slides long.

·         Be sure to utilize the Key Concepts for this segment of the lesson.

Step 3: Administer the History Check for Understanding.

·         The check for understanding is a short review of the content presented in the segment.

Step 4: Students should begin the Food Service Timeline Project.

·         Students will develop a timeline to illustrate and detail significant events and influences on the food service industry.

Step 5: Exit Ticket:

·         Instruct students to complete the third column of the KWL Chart Bell Ringer Activity and turn the activity in.

Step 1: Students should complete the Food Service Timeline Project.

·         Students will develop a timeline to illustrate and detail significant events and influences on the food service industry.

Step 2: Students should review the Introduction to Culinary Arts Capstone - Portfolio Student Handout.

·         The handout provides instructions for students to collect work samples throughout the course in preparation for developing a portfolio.

·         Have students save the Food Service Timeline Project in preparation for adding it to the portfolio.

Step 3: Exit Ticket:

·         Have students answer the following question in writing and turn it in with their project.

-   “What event in your timeline stood out to you and why?”

·         Students will research a chef or entrepreneur who has influenced the food service industry and develop a visual to share their findings.

Step 2: Administer the History of the Food Service Industry Final Assessment.

·         The assessment is a comprehensive assessment covering material throughout the entire lesson.

Step 3: Students should complete the Food Service Influencers Project.

·         Students will research a chef or entrepreneur who has influenced the food service industry and develop a visual to share their findings.

Step 4: Students should complete the Introduction to Culinary Arts - Portfolio Capstone Project.

·         Students will collect completed activities and projects for the lesson and place them in the Introduction to Culinary Arts Capstone - Portfolio.

Step 5: Exit Ticket:

·         Have students turn in their projects.

 

Activity Overview

Food Service Industry in History

Students will investigate a historical event, invention, influence or fact and share their findings with the class. This activity provides students the opportunity to further explore historical areas of interest.

 

Accommodations:

Prior to class, prepare some examples to share with students. Allow students additional time to complete the project.

 

Modifications:

Allow students to draw a picture or create a digital collage with pictures of a historical event they find interesting.

 

Extension:   

Have students do a presentation to share more about their topic. For example, if they chose to investigate the foods served from a chuck wagon, have them bring in samples of the food to share with the class.

 

Project Overview

Food Service Timeline

Students will develop a timeline to illustrate and detail significant events and influences on the food service industry. This project provides students the opportunity to focus on a specific time period and research the details of historical events affecting the development of the food service industry. Students should save the project as an artifact for the Introduction to Culinary Arts – Portfolio Capstone Project.

 

Supplies List:
(This list applies to students who choose to develop their timelines using print resources.)

Poster board or large blank paper

Accommodations:

Provide students with a list of resources to use for their research. Show students examples of timelines.

 

Modifications:

Provide students with a timeline template and have them fill in details appropriate to their individual needs.

 

Extension:   

When it is their turn to share their timeline with the class, have students dress up in a costume relevant to their assigned time period.

 

 

Food Service Influencers

Students will research a chef or entrepreneur who has influenced the food service industry and develop a visual to share their findings. This project provides students the opportunity to identify and illustrate opportunities for employment and advancement in the food service industry.

 

Accommodations:

Provide students with a list of resources to assist them with their research. Allow additional time to complete the project.

 

Modifications:

Provide a picture of a chef or entrepreneur and have students write down basic information about the influencer. Share specific resources to assist them in locating the information.

 

Extension:   

Have students locate and share an example of the influencer’s work, such as a recipe, a photo of their restaurant or business or an item of merchandise.

 

Introduction to Culinary Arts - Portfolio Capstone

Students will develop a section of their professional capstone portfolio reflecting on the elements integral to culinary arts. Students will add activities and projects from the lesson to the portfolio.
